Winemaker's Comment - Grapes hand selected during night harvest has produced this wine of distinctive character. Floral aromas with tones of citrus and green apple linger and are balanced by a subtle flintiness. Richer and fuller with lees contact than previous vintages. Enjoy with Salmon and Sushi. |

Vinification - Harvested at a low temperature with extensive berry selection. Chilled grapes pressed and barrel fermented at 10/13°C. Single vineyard block wine remained in old French oak barrels for 12 months before bottling. Extensive work with lees developed further complexity and concentration. |

Winemaker's Comment - Grapes hand selected during night harvest has produced this full wine of distinctive character. Dried fruit with tones of citrus interwoven with creamy toasted butterscotch. This rich full wine will go with chicken and veal dishes and creamy sauces. The 2009 vintage displays intense citrus and granny smith tones and a rich lees character. The 70 year old vines are create a fruity taste that really stands out! |

Vinification - Post harvest and after extensive bunch and berry selection the grapes were cold soaked over a 5 day period before undergoing extended fermentation in cooled stainless steel tanks. Regular . punch downs and aerated pump-overs with further carbonic maceration post fermentation for up to 10 days ensured the optimum flavour extraction. The wine was then racked, pressed and underwent Malolactic Fermentation and a further 6 months maturation in a selection of different French Barrels before unfiltered bottling. |

Winemaker's Comments -
Aromas of leather and black current extend into the pallet mingling with sweet berries and pepper. An extended finishlingering over soft ripe tannins. This is a big wine. Enjoy with Tapas to keep the Spanish Tempranillo at home. |

Winemaker's Comments - This rich wine has been produced in the excellent soils of Wellington and has flavor of cassis and ripe plums with intense vanilla and dark chocolate aromas. Unusual as a single variety, this wine represents the back bone of many famous blends. Drink now or mature until 2012 and beyond. |

Regular punch downs and aerated pumpovers with further carbonic maceration post fermentation for up to 10 days ensured the correct flavour extraction. The wine was then racked, pressed and underwent Malolactic Fermentation and a further 12 months maturation in a selection of different French Barrels before unfiltered bottling. |

Vinification - Grappa is a brandy that is distilled from the skins of pressed grapes. Most people enjoy grappa as a digestive or a conclusion to a fantastic meal. It is said that to drink a grappa made of the same varietal as the wine you had with your dinner is to experience true perfection. |

Winemaker's Comments - Double distilled, single varietal of our finest Merlot skins. Beautifully crystal clear. Aromas of berries, green apple and cherry. Best enjoyed after a good meal combined with fresh strong coffee and fine dark chocolate. |

Snow Mountain wines have been created from vineyards specifically chosen to suit their varietal. Grown at higher altitudes within the neigbouring hill sides, all within sight of Wellingtons glorious “Sneeukop” Mountain. These varietals grown generally in the coastal regions of South Africa benefit here from the long cold winters and extended periods of rest much like the continental vineyards of Burgundy |
